Lightbulb Quick Dry Potato Curry

When you wish to make something quickly yet tasty, you can try this. Maybe you all know about this, but we just made this last night.

Ingredients
  • Potatoes - 4 peeled, sliced into medium (or slightly larger) pieces
  • Onion - 1 chopped onion. If you have the time, chop it finely
  • Dhaniya (Coriander ) Seeds - 1 tablespoon
  • Jeera (Cumin) Seeds - 1 tablespoon
  • Black Pepper - whole - just a few
  • Red Chilli powder - 1 tabelspoon minimum, more if you like it spicy and hot
  • Turmeric powder - just a pinch
  • Garam Masala Powder (any brand like MDH, Everest)
  • Cooking Oil
  • Salt to taste

Recipe
  • On a high flame heat some cooking oil
  • Add cumin seeds to this oil and stir
  • Add Dhaniya seeds and stir
  • Add black pepper and stir
  • Add chopped onion and stir well. Keep flame high and stir the onion often so that it turns golden yellow but does not burn
  • Add the potatoes and add a pinch of turmeric
  • Stir the mixzture so that all potato slices get the oil and the turmeric on them
  • Now add water, just enough to cover the potatoes
  • Put the lid on
  • After 5 to 6 minutes the water will have boiled off a lot and potatoes are now turining tender
  • Add garam masala powder
  • Add the red chilli powder
  • Cover with lid and let it boil for just 2 minutes
  • Now keep lid open and let the boiling water evaporate
  • Using a big spoon crush one piece of the potato so that it becomes like a paste and spread it well inside the vessel
  • Add salt
  • Now you have a almost dry yet a bit thick potato curry.

PS: The whole masalas like cumin seeds, coriander seeds, etc. do not loose flavour due to boiling. As you know these are called "saboot" masalas or "khada" masalas because they are in whole form. These take longer to break down and spread their flavour. If you just use powdered spices then you might lose the flavour when boling with the vessel without a lid.

This recipe is more like a side-dish biggie... In my thread.. I have entered a completely cooked main dish recipe..
