Urgent help! Basundi isn't getting thicker!

Please! Help me out. I heated 1 liter of milk. When it reduced to half, I added sugar and dry fruits mix and some saffron. It's been boiling for more than 20 mins after it became half but it's not getting any thicker. What should I do?
Every member in my family back home are asleep. I can't call them

Re: Urgent help! Basundi isn't getting thicker!

You can try using corn starch.. but add little by little and stir constantly till you get the thickness you need.. you can start with condensed milk though and then add corn starch to help.. but can't think of any other way.. I know it is perhaps too late now to help you though.. by now you should be looking at dried or burnt milk if it was still boiling.

Re: Urgent help! Basundi isn't getting thicker!

Thanks, I removed it off the heat a few mins after I posted this. It is now fairly in the right consistancy but not sure if it's gonna thicken up too much after I chill. First attempt at this...didn't use any corn starch or anything.

Re: Urgent help! Basundi isn't getting thicker!

Naa corn starch will sorta interfere with the taste.. cond. Milk will do if it does not thicken enough.. just add that milk maid or what ever and let it boil (no water).. Remove.. no need to boil for long. It should work.. Mind you cond. milk has sugar in it already.. so if you are making it light on sugar.. you might want to look for the sugar free version next time around (Yes I have seen them in a few places but not everywhere though here in India) but in KAAANada.. you should find it in any of those chain stores like shop rite and such.

Re: Urgent help! Basundi isn't getting thicker!

Wait.. I got a better idea.. put it in small cups and put it in deep freeze for a few hours.. will become home made basundi kulfi!!! (Being in canada you might not even need a freezer.. just open your window).

Re: Urgent help! Basundi isn't getting thicker!

I will remember the condensed milk version for next time Gpel. Thanks! It tastes really good right now. Just worried if it's gonna thinks up too much chilling!

You are right, we usually leave beer in the backyard for if to chill sooner than our freezer! Lol

Re: Urgent help! Basundi isn't getting thicker!

Fine paste of few almonds and or cashew would also make it thick and would also taste good.

Re: Urgent help! Basundi isn't getting thicker!

Swamiji eggsellent tip which will add some very nice quantity of protein to the whole mix.. will be very healthy too on top of being tasty.

I was gonna say it (except I was going to say cashew only not almonds and cashew) but the thing on my mind was retaining the "smooth" texture of reduced milk.. adding corn starch (not flour) does that (boiling corn flour and filtering and mixing the gluy liquid) all powders or pastes if dry fruits end up giving a "rough" texture" to the finished product (not that it is bad but some people don't prefer it and some think "blotting paper is added" yes halwais use blotting paper rather effectively)..

Re: Urgent help! Basundi isn't getting thicker!

keep boiling and stirring.. I generally use the microwave to make rice & milk pudding/kheer, this way i dont have to worry about it sticking to the bottom. I usually start with a small amount of milk and keep adding every time I stop the microwave to stir.. the kheer ends up with a very thick consistency.
