Peas Pulav

Soak 2 cups Basmati rice in water for 15 mins

In a pressure cooker, add 2 tbsp ghee and spread at the bottom of the cooker.
Add 3 tsp jeera/ cumin, 1 bay leaf. Spread the drained rice in the cooker. Add 1 cup frozen/fresh peas, 1 tsp salt. From the sides, add 1 cup water. Cook on high for 4 whistles. Let pressure settle. Open, fluff and serve.

Almost all your recipes mention "cook on high for xx whistles". I wonder how it affects the taste.

I prefer slow cooking. Even when using a pressure cooker, I wait for the first whistle on high, and then turn the gas down to sim.

It actually enhances the taste, texture and flavor.

Cooking in aluminium pressure cookers.. not the healthiest thing.

I don't often use pressure cookers, when I do I use a black steel one. Except boiling daal/rajma/chana I don't use pressure cookers.

Yeah, you need pressure cooker for gravy items generally. As far as possible, I prefer to do my cooking on sim.

That is the correct technique. I've said this previously, pressure cookers were invented mainly to thaw hard food under pressure, and to speed up cooking process, in turn save fuel. In olden times, it used to take hours, sometimes days to cook daal or chana.

Cooking on sim insures the ingredients get blended properly, especially things like tadka, or curry paste has to be cooked on sim.

yes, longer but won't use up much fuel. Of course, it's not for fast cooking.. generally housewives would check on such stuff every 10 minutes.

cookers may have been invented for soups etc but its only about now we are fully using it for a verity of reasons.
I disagree with you about cooking on open stove being the correct technique. I mean, i disagree with the notion that its the only technique

Well, with all kinds of dal, whether whole or split, I prepare the tadka separately and boil the dal simply with salt and some chopped onion.

Sometimes, no tadka, just boiled dal with lots of ghee
